Chicken Enchilada Cake

INGREDIENTS – 4 SERVES*
• 567 g Mission Wraps 8 Pack
• 450 g jar enchilada or salsa sauce
• 2 cups leftover shredded roast chicken
• 150 g mozzarella cheese, grated.
*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

METHOD
• Preheat oven to 180°C.
• Line a 20cm cake tin with baking paper.
• Onto the base lay a tortilla.
• Simply layer in this order: tortilla, salsa, chicken, cheese.
• Continue the layering until all ingredients are used.
• End with a tortilla, spread over salsa and sprinkle with last bit of cheese.
• Bake until the cheese is completely melted, and the sauce is bubbling, about 30 minutes.
• Remove from oven, rest for 10 minutes then slice (and slice into wedges as you would a ‘cake’) sprinkle some chopped coriander to serve.

Optional: This recipe lends itself beautifully to successful Veggie Smuggling. Sprinkle chopped shallots, capsicums and corn with the chicken and served garnished with fresh coriander

With the Italian night coming to The Bribie Island Golf Club in June the wine on arrival will most certainly be a Prosecco and almost certainly be one from Italy. At the moment the rise and exposure of Prosecco in Australia reminds me of the 1970’s and 1980’s when pretty well every Australian sparkling wine was labelled Champagne and it took legal action from the French winemakers of Champagne in conjunction with the European Union to stop the use of the term Champagne, failure to do so would result in Australia being stopped from exporting wines to countries within the Union which included our huge market in the United Kingdom. The reason was twofold, firstly Champagne is a district in France and even wines produced a stone’s throw outside this district cannot use the label Champagne even if they use the same grape varieties. Whilst not only were we outside the area but we used any grape variety we could lay our hands on as long as it sparkled, also Champagne is made within the bottle you finish up buying whereas most of our sparkling wine in those days was made by the adding of carbon dioxide in much the same way as a fizzy soft drink.

The reason I mention this because at this moment the Italians are trying to stop Australian wineries from using the term Prosecco with the support of The European Union, however firstly there is no region in Italy called Prosecco which is actually a grape variety, having been renamed from its original name of Glera in 2009, however the wine is made with the regions of Veneto and Fruili Vernezia regions of North West Italy exclusively. The problem is as I see it is that any banning of this name would cause severe problems to the Australian wine industry as so many wineries have jumped on the band wagon producing a Prosecco sparkling wine, whether they are using the true grape variety is debatable and are just cashing in on the name. I do believe however that as the E.U. has to support its member countries, especially on trade, and every bottle of Australian Prosecco sold is one less Italian and that in due course the E.U will use its might and threaten some form of embargo on Australian wine if Australian wineries continue to use the term Prosecco.

Let’s have a look at what alternative white wine grape varieties are now moving into the market place and give a brief description, Sauvignon Blanc only became the successful wine it is by consumers looking for something different to Chardonnay and Riesling in the mid 1990’s. Instead of Prosecco try Freixenet Cordon Negro Brut Cava from Spain this wine is one of the world’s largest selling sparkling wines and is available in most liquor outlets.

Pinot Grigio, Albarino, GrunerVetlinger, Muscadet, Gewurtztraminer, Vihno Verde, Fiano, Marsanne, Richer white Varieties Pinot Gris, Chenin Blanc, Viognier, Vermentino.

Red Wine

Big reds

Tempranillo, Malbec, Mourvedre, Pinotage, Petit Syrah, Tannat Having said that several wines from Tuscany use the Sangiovese grape and can also be classed as big for example Brunello and Chianti Classico. Super Tuscan wines use non Italian varieties such as Cabernet Sauvignon, Merlot and Cabernet Franc.

Like in France where outstanding wines are submitted to a panel to be classified as Appellation Controlee which give consumers confidence when deciding which wine to buy, Italy have two grades of classification that is DOC and DOCG which is shown on the neck of the bottle by a paper strip, again wines carrying this paper strip should be amongst the best produced, however because Super Tuscan wines are made with ‘foreign grapes’ they can’t carry this label. Mexican Chicken Salad in Baked Tortilla Bowl

Healthy and filling, this salad bowl is full of fresh ingredients and flavours.
Even better when it’s served in a fun and easy-to-make edible tortilla bowl!

INGREDIENTS – 4 SERVES*

  • 500 g chicken tenderloin, sliced.
  • 2 tsp light extra virgin olive oil
  • 2 tbsp Community Co Taco Seasoning
  • 1 can of black beans, drained and rinsed (to remove excess salt)
  • 1 green capsicum, sliced.
  • 1 yellow capsicum, sliced.
  • 1 red capsicum, sliced.
  • 1 red onion, sliced.
  • 1 avocado, remove skin and seed.
  • 2 Roma tomatoes, diced.
  • 1 Jalapeno pepper finely chopped.
  • 1 bunch coriander, chopped (reserve a few sprigs for garnish)
  • 2 limes, each cut into 4 wedges.
  • 2 packet 250g Community Co Microwave Brown Rice
  • 4 large Community Co Whole Grain Tortillas

METHOD

  • Cook the brown rice according to the packet instructions.
  • Preheat the oven to 150°C, place each tortilla in a heatproof bowl, bake for 10-15min until it’s lightly toasted and holds its shape. Cool.
  • In a medium bowl mix the chicken and 1 tsp of oil and taco seasoning together, marinate for a few minutes.
  • Add capsicums and half of the sliced red onion to the marinated chicken.
  • Meanwhile, make the salsa and guacamole.
  • For the salsa, finely chop the other half of the red onion, mix together with jalapeno pepper, Roma tomatoes and coriander, season with salt and pepper.
  • In another bowl, mash the avocado with juice of half the lime and stir in 1/3 cup of the salsa. Season with salt and pepper.
  • Heat up the black beans in a pan over medium heat.
  • Preheat the BBQ or heat a pan with 1 tsp of oil over medium heat.
  • Grill or pan-fry the chicken, onion and capsicum until it’s cooked and slightly charred.
  • Divide ingredients evenly over brown rice bowls served with lime wedges and fresh coriander to garnish.

Veggie Stir-Fry with Oyster Sauce

INGREDIENTS 4 SERVES*
• 2 garlic cloves thinly sliced.
• 400 g IGA Fresh Stir-Fry
• 1/3 cup oyster sauce
• 1/3 cup roughly chopped coriander.

METHOD
• Heat 1 tbsp sesame oil in a wok over high heat.
• Stir-fry the garlic for 30 seconds.
• Add the vegetables and stir-fry for 1 minute.
• Add ¼ cup water anwd stir-fry until the vegetables are bright green and almost tender, 2 minutes.
• Add the oyster sauce and fresh coriander and toss.
Serve immediately.

These grains are found to cause health problems in humans and their pets. Researchers find that grains increase risks for autoimmune diseases and other illnesses in humans and their pets. Grass-Fed cattle do not mean that the cattle were raised free to roam in pastures. Producers are not required to provide a full Grass-Fed diet to their cattle as stated on many labels. Grass-Fed on labels can mean that the animal started out on a grass diet but later was fed supplemental grain feed and finished out their life on this grain-based diet.

BRIBIE PINK DRAGONS PADDLE IN N. Z.

Bribie Pink Dragons, a breast cancer survivors club, is celebrating its 15th anniversary this year. For the past decade and a half, members have been paddling dragon boats on our beautiful Pumicestone Passage, enjoying the physical and emotional benefits of being part of a supportive and motivated community. Breast cancer survivors often feel isolated and in need of support from other women who have gone through similar experiences. The Bribie Pink Dragons provide just that – a dedicated and caring group of survivors, as well as their families and friends, who have experienced the ups and downs of cancer and are always there in unconditional and loving support.

The club has achieved many accomplishments over the years, including competing at international regattas. Five years ago, 19 members travelled to Florence, Italy, and won a race, our first ever. On April 9th, six members left Bribie to team up with Melbourne’s Dam Busters to compete at the International Breast Cancer Paddlers Commission IBCPC Participatory Festival at Lake Karapiro in New Zealand. This festival is an event for paddling teams that use dragon boat paddling as a means of rehabilitation for breast cancer survivors. The event brings together up to 4,000 women and men of all ages, fitness levels, and nationalities, all dressed in pink who all share a common experience. One of our club members is Joyce Thomas, diagnosed with breast cancer at the age of 69, and has been paddling regularly for almost 12 years. Joyce turned 89 soon after arriving in New Zealand, making her not only the oldest member of our club but the oldest participating paddler. In her honour, and to our great pride, she has been chosen to carry the Australian flag at the Closing Ceremony as well as fill the role of drummer in the Sandy Smith Global Final event. This race comprises a member selected from each team to participate in 6 boats, then raft up for the “Flowers on the Water” ceremony in remembrance of all women who have lost their fight to breast cancer

Well you don’t need to make a Google search to begin to know that financial things are changing and not for the better but other than experiencing a visit to the supermarket how do we get to know more as we empty our wallets and purses at the checkout?

Now in that first paragraph there might just be a glimmer of what could be going on. Senior economists, public servant bureaucrats and elected government figures by and large don’t do supermarket shopping. You work at the coalface; they don’t. Now one of these ‘elites’ will likely scoff at such a comment saying that of course they have staff who gather all the information which they then use to macro manage the complete economy based on a assembled picture of how the country is facing current economic hurdles. But you do know the facts when standing in the aisle looking at heftily rising shelf prices; you feel the hit and the fear. You know that the bank is going to increase your mortgage payments as the interest rates rise, this will leave less money from your budget to pay for the food now in your trolley at its increased prices. No amount of written reports and statistics on a screen can impact in the same way.

If you remember back to the TV interview of Philip Lowe the governor of the Reserve Bank you might remember how he stated that he understood the difficulties faced by ordinary citizens as he announced another interest rate rise. He actually giggled as he made the statement whilst walking away from camera. Now I don’t think for a minute that the man is callous and was making light of the matter, I think that he just didn’t know and knew that he didn’t as he made the statement. The giggle was a show of embarrassment.

You are probably aware of the term ‘capital’. Most folk think that it mostly is used in a monetary sense, which is correct, however capital can mean much more. The wider term ‘human capital’ refers to the total worth, abilities, knowledge, experience and skills of a group of people, a state, a nation, a sub group or indeed the whole world’s population. It is generally accepted that 90% of the human capital of any group, resides in the general population, the remaining 10% is held by the elites in a society.

The general population do the ‘doing’. Elites offer ideas and ideologies for which, they pay no price if they are proved wrong. The ‘doers’ do pay the price if they get it wrong. If a politician announces a project and it goes toes up he/she just moves on. If an engineer builds a bridge and it collapses she/he is ruined. If you consider this then much is revealed as to why so many poor decisions get made. The poorer equipped entity is forcing the decision making process.

Ordinary citizens are often perplexed at decisions made by authorities be they at federal, state or local levels. The term ‘common sense’ so often banded about is what’s known in language as an oxymoron – a contradiction in term, in this instance the ‘sense’ mentioned is not at all ‘common’. You don’t have to search too deep into your own experience to come up with examples of this.

I am not claiming any great knowledge of economics or how the authorities make their decisions as to the management of our country’s finances but I do know that economics like all sciences has many opinions within its boundaries. In the current instance it could well be that because Mr Lowe does not directly manage a household economy he is unaware of the short term effects of his policies on real people. He doesn’t know that you will change your shopping methods to better suit your budget if the prices just get out of kilter. Your actions will have profound effects on businesses over the short term. Lowe must wait for his myriad minions to gather the statistics of rising or falling demand which will translate in all good time to sales of goods, then to unemployment figures as businesses rise or fall against his interest rate barriers. He is maybe working way behind the eight ball and won’t know what is really going to happen. If I were a gambling person, which I’m not, my bet would be that he’s overshot the mark after his earlier actions or inactions and he’s now putting us in the way of a recession that can only to be handled by dropping interest rates again.

If you read the financial pages you can pick up that major bank economists are predicting a continuing rise in rates this year and then a winding back of the same over the following couple of years. This could indicate that these guys are also betting that it’s all been overdone and will need future adjustment rather than the bank just letting things even out naturally; in other words allowing time to elapse before you strike again and cause hurt. In the first case of the up/down method, we the common folk will do the suffering and Mr Lowe and his compatriots will suffer nothing but will in time tell us that they have done the right things and have successfully guided us through a difficult time. All this being in line with the previous idea, that the ‘elites’ carry no consequences for their actions.

There is nothing you or I can do in all this but try to protect our own from the worst of the tumult, but I’d suggest that you owe no thanks to the elite – they’re nothing to be much admired. Being a little bit naughty there’s a quote from Thomas Sowell that goes:
